How to make fruit custard

Ingredients:

  • 2 ½ cups whole milk
  • 5 tablespoons sugar
  • 3 tablespoons custard powder
  • ¼ cup milk (warm or room temperature)
  • 1 ½ – 2 cups chopped fresh fruits (your choice!)

Instructions

Prep the custard base: In a small bowl, whisk together the custard powder and ¼ cup warm milk until smooth and free of lumps. Set aside.
Heat the milk: In a saucepan over medium heat, bring the remaining milk (2 ½ cups) and sugar to a simmer. Don’t let it boil.
Temper the custard: Slowly whisk the custard mixture into the hot milk, a little at a time, while continuously whisking. This prevents the eggs from scrambling.
Thicken the custard: Increase the heat to medium-low and cook, stirring constantly, until the custard thickens and coats the back of a spoon. This takes about 5-7 minutes.
Cool and flavor: Remove the pan from heat and stir in the vanilla extract, if using. Let the custard cool slightly at room temperature. Cover the surface with plastic wrap directly touching the custard to prevent a skin from forming. Then, chill the custard in the refrigerator for at least 2 hours, or until completely cold.
Assemble and serve: Once chilled, spoon the custard into individual serving bowls. Top with your favorite chopped fruits and a dollop of whipped cream or ice cream, if desired.
