Motichur Laddu Recipe Ingredients

  • 1 cup besan (gram flour)
  • 1/2 cup sugar
  • 1/2 cup water
  • 1/4 teaspoon saffron powder
  • 1/4 teaspoon cardamom powder
  • 1/4 teaspoon baking soda
  • 1/4 teaspoon salt
  • Oil for deep frying

Lets make Motichur Laddu

  1. In a large bowl, combine the besan, sugar, water, saffron powder, cardamom powder, baking soda, and salt. Mix until a smooth batter forms.
  2. To check if the oil is hot enough, drop a small piece of batter into the oil. If it floats to the top and sizzles, the oil is ready.
  3. Using a piping bag or a spoon, carefully drop small balls of batter into the hot oil. Fry the boondi (small pearls) until golden brown and crispy.
  4. Remove the boondi.
  5. Add 1 tablespoon of ghee. Add the boondi and cook for a few minutes, stirring constantly.
  6. Add the sugar and water to the pan and stir until the sugar dissolves.
  7. Cook the mixture until it thickens and forms a syrup.
  8. Remove the pan from heat and let the mixture cool slightly.
  9. With wet hands, shape the mixture into small balls.
  10. Garnish the laddus with chopped nuts and serve.

Important Tips for Motichur Laddu

  • You can add a few drops of food coloring to the batter for a more vibrant color.
  • If the batter is too thick, add a little more water.
  • Be careful not to overcook the boondi, or it will become hard.
  • Motichur laddu can be stored in an airtight container for up to a week.
