Potato Curry Recipe ( Aloo Curry )

This classic North Indian dish ( Potato Curry Recipe ) is simple yet flavorful, featuring potatoes and cauliflower simmered in a creamy tomato-based gravy.

Potato Curry Recipe Ingredients

  • 2 medium potatoes, peeled and cubed
  • 1 medium cauliflower, cut into florets
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • 1 inch ginger, grated
  • 1 tablespoon tomato paste
  • 1/2 teaspoon turmeric powder
  • 1/2 teaspoon red chili powder
  • 1/4 teaspoon coriander powder
  • 1/4 teaspoon garam masala
  • 1/4 cup yogurt
  • 1/4 cup heavy cream (optional)
  • Salt to taste
  • Oil for cooking
  • Chopped cilantro, for garnish

How to make Potato Curry Recipe

  1. Heat oil in a pan over medium heat.
  2. Add the onion and cook until translucent.
  3. Add the garlic, ginger, and spices (turmeric, red chili, coriander, garam masala) and cook for another minute, releasing the fragrance.
  4. Add the tomato paste and cook for 2-3 minutes, stirring frequently.
  5. Add the potatoes and cauliflower, and enough water to slightly cover them. Season with salt.
  6. Bring to a boil, then simmer for 15-20 minutes, or until the potatoes and cauliflower are tender.
  7. Stir in the yogurt and cream (if using) and cook for another 5 minutes to heat through.
  8. Garnish with cilantro and serve hot with rice or roti
