Kesar Kheer recipes
Ingredients
- 1 cup basmati rice
- 1 litre milk
- 10-12 strands of saffron
- 1/2 cup sugar
- 1/4 cup chopped nuts (pistachios, almonds)
- 1/4 teaspoon cardamom powder
Instructions
- Rinse the rice and absorb 20 – 30 minutes.
- Heat the milk in a pan over medium heat.
- Once the milk comes to a boil, add the soaked rice and saffron.
- Cook the rice on low heat, stirring occasionally, until it is soft and mushy.
- Add the sugar and nuts and cook for a few more minutes.
- Also remove from the heat and stir in the cardamom powder.
- Serve hot or chilled.
Besan Ladoo recipes
Ingredients
- 1 cup besan (gram flour)
- 1/2 cup ghee
- 1/2 cup sugar
- 1/4 teaspoon cardamom powder
- 1/4 cup chopped nuts (pistachios, almonds)
Instructions
- Heat the ghee in a pan over medium heat.
- Add the besan and cook, stirring constantly, until it turns golden brown.
- Add the sugar and nuts and cook for a few more minutes.
- Let the mixture cool slightly, then shape it into ladoos.
- And store in an airtight container.
Malpua recipes
Ingredients
- 1 cup all-purpose flour
- 1/2 cup semolina
- 1/2 cup sugar
- 1/4 teaspoon cardamom powder
- 1/4 teaspoon saffron strands
- 1/4 cup milk
- 1/4 cup water
- Ghee for frying
Instructions
- In a bowl, whisk together the flour, semolina, sugar, cardamom powder, and saffron.
- Add the milk and water and whisk until a smooth batter is formed.
- Heat the ghee in a pan over medium heat.
- Pour a small ladleful of batter into the hot ghee and fry until golden brown on both sides.
- Drain on paper towels.
- Serve hot or chilled.
Khichdi recipes
Ingredients
- 1 cup rice
- 1 cup lentils (moong dal, masoor dal)
- 1 onion, chopped
- 2 tomatoes, chopped
- 1 inch ginger, chopped
- 4-5 garlic cloves, chopped
- 1 teaspoon cumin seeds
- 1/2 teaspoon turmeric powder
- 1/2 teaspoon garam masala
- 1/4 teaspoon red chili powder
- 1/4 teaspoon coriander powder
- 1/4 teaspoon salt
- Ghee or oil for cooking
Instructions
- Rinse the rice and lentils and drain them well.
- Heat the ghee or oil in a pan over medium heat.
- According to your taste add cumin seeds.
- Add the onions and cook until softened.
- Add the ginger and garlic and cook for a minute.
- Also Add the tomatoes according to your needs and cook it.
- Add the turmeric powder, garam masala, red chili powder, coriander powder, and salt.
- Add the rice and lentils and mix well.
- Add enough water to cover the rice and lentils by about an inch.
- Once it starts boiling then reduce the heat and cook it for 20-25 mins.
- Serve hot with ghee, raita, or salad.
